WooCommerce Admin and Analytics are switched off right away, because that is the default setting. Nothing else changes until you turn it on yourself under Settings → Disable Bloat, so you stay in control of every other option.
No. WooCommerce styles and scripts are only removed on pages that are not part of your store. Your shop, product, cart, checkout and account pages keep loading everything they need – it is the blog posts and landing pages that stop carrying WooCommerce code they never used.
